PALMENTO BELLA COSTANZA

The Palmento is one of the most popular rural architecture in Sicily. Still in use until the mid-twentieth century, the crushing collective work was organized so that the grapes would restore as much as possible wine. The work of the beating happened in the tubs, where the grapes were collected in little hillocks covered by a circular hoop and then pounded. The remaining must was further compressed by a wooden plank, pressed by the worm screw. Both the harvest as the pressing were occasions for socialization into the world of winemaking.
